At Shrub Oak International School, a recent health class brought a flavorful experience to the table with a lesson on Chicken Tikka Masala. This vibrant dish, served every other Friday at the Shrub Oak Café, was a wonderful opportunity for our students to explore new flavors while learning about its cultural background and nutritional value.
Before the tasting began, students engaged in a lesson discussing the origins of Chicken Tikka Masala. Many were surprised to learn that, despite its association with Indian cuisine, the dish was actually created in Scotland by a South Asian chef named Ali Ahmed Aslam. Seeking to satisfy local tastes, he combined traditional chicken tikka with a creamy tomato sauce, resulting in the now-iconic Chicken Tikka Masala. This unique blend of culinary influences sparked a conversation on how cultures often merge through food, creating new and delicious traditions.
In addition to its cultural significance, students and staff explored the nutritional aspects of the dish. Shrub Oak’s version of Chicken Tikka Masala included a dairy-free twist by using coconut milk instead of traditional cream. Coconut milk not only provides a rich and creamy texture but also offers beneficial fats that support heart health. Cauliflower was added as well, enhancing the meal with fiber, antioxidants, and essential vitamins. Serving the dish over brown rice introduced students to a whole-grain alternative that is higher in fiber and nutrients compared to white rice.
